Seed Sourcing
Rajasthan & Haryana farms
We source yellow mustard seeds (Brassica juncea) directly from farmers in Rajasthan and Haryana — the traditional mustard belt of North India. Seeds are inspected for moisture content, purity, and absence of adulteration before acceptance. No blended or imported seed lots.
Cleaning & Conditioning
Dust, debris and foreign matter removed
Seeds pass through a multi-stage cleaning system — air separation, vibrating screens, and gravity tables — to remove dust, stones, and weed seeds. No chemical treatment or fumigation at any stage. Seeds are then conditioned to optimal moisture for pressing.
Cold Pressing — Kachi Ghani
Below 45°C throughout extraction
Seeds are fed into our kachi ghani (wooden/stone press) at a controlled, slow RPM. The press generates minimal friction heat — oil temperature never exceeds 45°C during extraction. This preserves allyl isothiocyanate (the pungent compound), omega-3 fatty acids, and natural antioxidants that are destroyed above 60°C.
Natural Settling & Filtration
24–48 hour gravity settling
Freshly pressed oil is transferred to settling tanks where natural sediment sinks over 24–48 hours by gravity alone. No centrifuge, no bleaching, no deodorisation. The oil is then passed through a fine mesh filter to remove remaining fine particles — nothing else.
Quality Testing
Every batch tested before bottling
Each batch is tested for free fatty acid (FFA) content, peroxide value, moisture, and adulteration markers before bottling. We test for the presence of argemone oil — the most common adulterant in Indian mustard oil — using the Nitric Acid test. Results are recorded batch-by-batch.
FSSAI-Certified Bottling

Oil is bottled in food-grade PET or glass containers at our FSSAI-licensed facility in Sector 9A Market, Gurugram. Each bottle is labelled with batch number, pressing date, best-before date, and our FSSAI licence number. No preservatives, no additives, no artificial colour.

Why It Matters
What You Lose When Oil is Heated Above 60°C
The difference between cold pressed and refined is not marketing — it is chemistry.
Allyl Isothiocyanate
The pungent compound in mustard oil. Antibacterial, antifungal. Destroyed above 60°C.
Omega-3 Fatty Acids (ALA)
Anti-inflammatory. Mustard oil has one of the best omega-6:omega-3 ratios of any cooking oil. Oxidised by heat.
Vitamin E (Tocopherols)
Natural antioxidant. Protects cells from oxidative damage. Removed during refining.
Glucosinolates
Precursors to cancer-protective compounds. Degraded by heat and solvent extraction.
Natural Colour & Aroma
Indicators of purity. Bleached and deodorised out of refined oil — replaced with artificial additives.
Erucic Acid (natural level)
Present naturally in mustard oil at safe levels. Refining does not remove it — but heat damages its structure.

Process FAQ
What does "kachi ghani" mean?
"Kachi ghani" literally means raw press in Hindi. It refers to the traditional wooden or stone press method of extracting oil from seeds without applying external heat. The slow mechanical pressing keeps oil temperature below 45°C, preserving nutrients and flavour compounds that are destroyed in heat-processed or solvent-extracted oils.
How is cold pressed oil different from refined oil?
Refined oil is extracted using chemical solvents (usually hexane) at high temperatures (150–200°C), then bleached, deodorised, and treated to remove colour and smell. Cold pressed oil uses only mechanical pressure below 45°C — no solvents, no bleaching, no deodorisation. The result retains natural fatty acids, antioxidants, and the characteristic pungency of mustard.
How do I know Dune Aura oil is genuinely cold pressed?
Three ways: (1) Our FSSAI licence number is printed on every bottle — you can verify it on the FSSAI website. (2) Genuine cold pressed mustard oil has a strong, pungent aroma and deep golden-amber colour — refined oil is pale and mild. (3) We manufacture in Gurgaon at Sector 9A — you can visit and see the process yourself.
What is argemone oil and why does it matter?
Argemone mexicana is a weed whose seeds look similar to mustard seeds. Argemone oil is toxic and has caused mass poisoning outbreaks in India (the 1998 Delhi epidemic killed over 60 people). We test every batch for argemone contamination using the standard Nitric Acid test before bottling.
Is Dune Aura oil glyphosate-free?
We source from traditional farming regions in Rajasthan and Haryana where mustard cultivation does not use glyphosate-based herbicides. Our seeds are tested for pesticide residues. We do not hold a formal "Certified Glyphosate-Free" third-party certification at this time, but we test for residues and publish results on request.
