Cold Pressed Oils and Thyroid Health: What You Need to Know

Thyroid disorders affect 1 in 10 Indians. The oil you cook with can either support or impair thyroid function. Here's what the research says — including which oils to use and which to avoid.

India has one of the highest rates of thyroid disorders in the world. Approximately 42 million Indians have thyroid disease — with hypothyroidism (underactive thyroid) being the most common form, affecting an estimated 1 in 10 adults. Women are 5–8 times more likely to develop thyroid disorders than men.

The thyroid gland regulates metabolism, energy production, body temperature, heart rate, and dozens of other functions. When it's underactive, the effects are wide-ranging: fatigue, weight gain, cold intolerance, hair loss, depression, and cognitive impairment.

Diet is one of the most important modifiable factors in thyroid health. The oil you cook with every day has a direct impact on thyroid function — both positive and negative.

How Cooking Oils Affect the Thyroid

The Omega-3 Connection

Thyroid hormones (T3 and T4) are produced in the thyroid gland and transported through the bloodstream to cells throughout the body. For thyroid hormones to work, they need to bind to receptors on cell membranes. The fluidity and composition of cell membranes — which is directly influenced by dietary fatty acids — affects how well thyroid hormone receptors function.

Omega-3 fatty acids (particularly DHA and EPA) improve cell membrane fluidity and enhance thyroid hormone receptor sensitivity. Diets deficient in omega-3 are associated with reduced thyroid hormone activity even when thyroid hormone levels are normal.

Cold pressed mustard oil contains 5.9g of ALA (alpha-linolenic acid, an omega-3 precursor) per 100g — the highest of any commonly used Indian cooking oil. Regular consumption supports thyroid hormone receptor function.

Selenium and Thyroid Function

Selenium is an essential mineral for thyroid function. The conversion of T4 (inactive thyroid hormone) to T3 (active thyroid hormone) is catalysed by selenoenzymes — enzymes that require selenium to function. Vitamin E is a powerful antioxidant that reduces oxidative stress and has been shown to reduce thyroid antibody levels in patients with Hashimoto's thyroiditis. Cold pressed oils — particularly mustard oil (11mg per 100g), sesame oil, and rice bran oil — are good dietary sources of vitamin E.

Cold Pressed Rice Bran Oil

  • Oryzanol supports thyroid function by improving metabolic rate
  • Tocotrienols (a form of vitamin E) with strong antioxidant properties
  • High smoke point suitable for all cooking methods

Recommendation: Use for deep frying and high-heat cooking.

Oils That May Impair Thyroid Health

Refined Sunflower Oil and Refined Soybean Oil

These oils are high in omega-6 fatty acids and low in omega-3. The resulting pro-inflammatory state is associated with worsened autoimmune thyroid disease.

Additionally, soybean oil contains isoflavones (phytoestrogens) that may interfere with thyroid hormone synthesis in people with iodine deficiency — a common condition in India.

Refined Palm Oil

High in palmitic acid, which has been shown to impair thyroid hormone receptor sensitivity. Also associated with increased inflammatory markers.

Partially Hydrogenated Oils (Vanaspati)

Trans fats in vanaspati interfere with the conversion of T4 to T3 by competing with essential fatty acids for the enzymes involved in this conversion. Avoid completely.

The Goitrogen Question

Some foods contain goitrogens — compounds that interfere with thyroid hormone synthesis by blocking iodine uptake. Cruciferous vegetables (cabbage, cauliflower, broccoli, mustard greens) contain glucosinolates that can act as goitrogens in large amounts.

Does mustard oil contain goitrogens?

Mustard oil contains glucosinolates (the precursors to allyl isothiocyanate). In very large amounts, glucosinolates can theoretically interfere with thyroid function. However:

  1. The amount of glucosinolates in mustard oil is much lower than in mustard seeds or mustard greens
  2. Cooking destroys most glucosinolates
  3. The anti-inflammatory and omega-3 benefits of mustard oil far outweigh any theoretical goitrogenic effect at normal dietary amounts
  4. Populations that have consumed mustard oil for centuries (Bengal, Punjab, Bihar) do not show elevated rates of thyroid disease attributable to mustard oil consumption

The verdict: Mustard oil is safe for people with thyroid disorders at normal dietary amounts. The benefits outweigh the theoretical risks.

Practical Recommendations for Thyroid Health

  1. Switch to cold pressed mustard oil as your primary cooking oil — the omega-3 content is the most important dietary intervention for thyroid hormone receptor function.

  2. Add cold pressed sesame oil as a finishing oil — the sesamin content reduces autoimmune inflammation.

  3. Eliminate refined sunflower oil — the high omega-6 content promotes inflammation that worsens autoimmune thyroid disease.

  4. Eliminate vanaspati — trans fats directly impair T4 to T3 conversion.

  5. Ensure adequate iodine intake — iodised salt is the most important dietary source of iodine for thyroid function. Oil quality matters, but iodine deficiency is the primary dietary cause of hypothyroidism in India.

  6. Don't rely on diet alone — established hypothyroidism requires medical treatment (levothyroxine). Dietary changes support thyroid health but don't replace medication.
