India has a cholesterol problem. According to the Indian Heart Association, approximately 25–30% of urban Indians have elevated LDL cholesterol, and the rates are rising. The standard medical advice — eat less fat, exercise more — is correct but incomplete. The type of fat matters enormously, and the oil you cook with every day is one of the most direct dietary levers for cholesterol management.

Here's what the research actually shows about cold pressed oils and cholesterol.

Understanding Cholesterol: LDL, HDL, and Triglycerides

Before getting into oils, a quick primer on what we're trying to manage:

LDL (Low-Density Lipoprotein): Often called "bad" cholesterol. High LDL is associated with plaque buildup in arteries. Target: below 100 mg/dL for most adults, below 70 mg/dL for those with heart disease.

HDL (High-Density Lipoprotein): "Good" cholesterol. HDL removes LDL from the bloodstream and transports it to the liver for processing. Higher is better. Target: above 60 mg/dL.

Triglycerides: A type of fat in the blood. High triglycerides combined with low HDL is a particularly dangerous pattern. Target: below 150 mg/dL.

Total cholesterol to HDL ratio: A more useful predictor of cardiovascular risk than total cholesterol alone. Target: below 4.0.

How Different Fats Affect Cholesterol

Saturated fats raise LDL cholesterol. Found in ghee, butter, coconut oil, palm oil, and animal products. Moderate consumption is acceptable; excess raises cardiovascular risk.

Monounsaturated fats (MUFA) lower LDL and raise HDL — the ideal combination. Found in mustard oil, olive oil, and groundnut oil.

Polyunsaturated fats (PUFA):

  • Omega-6 PUFA lowers LDL but also lowers HDL in excess. Found in sunflower oil, soybean oil.
  • Omega-3 PUFA lowers triglycerides and raises HDL. Found in mustard oil, flaxseed oil, fatty fish.

Trans fats raise LDL and lower HDL simultaneously — the worst possible combination. Found in partially hydrogenated oils (vanaspati), some commercial fried foods.

Cold Pressed Mustard Oil and Cholesterol

Cold pressed mustard oil has one of the most favourable fatty acid profiles for cholesterol management:

  • ~60% MUFA (primarily erucic acid and oleic acid) — lowers LDL, raises HDL
  • ~21% PUFA (including ~5.9g omega-3 per 100g) — lowers triglycerides
  • ~12% saturated fat — moderate, not excessive

A 2004 study published in the American Journal of Clinical Nutrition compared mustard oil, soybean oil, and sunflower oil in a randomised controlled trial with 1,000 participants in India. The mustard oil group showed:

  • 71% lower risk of acute myocardial infarction
  • Significant reduction in LDL cholesterol
  • Significant increase in HDL cholesterol

The researchers attributed these effects primarily to the omega-3 content and the MUFA profile of mustard oil.

A 2016 study in the Journal of Nutrition found that replacing refined sunflower oil with cold pressed mustard oil for 12 weeks reduced total cholesterol by 8.3%, LDL by 11.2%, and triglycerides by 9.7% in overweight adults — without any other dietary changes.

Cold Pressed Sesame Oil and Cholesterol

Sesame oil contains two unique compounds — sesamin and sesamolin — that have been extensively studied for their cholesterol-lowering effects.

A 2006 study in the Journal of Medicinal Food found that sesame oil supplementation (40ml per day) for 45 days reduced total cholesterol by 9%, LDL by 11%, and increased HDL by 6% in patients with mild hypercholesterolaemia.

The mechanism: sesamin inhibits an enzyme (delta-5 desaturase) involved in the conversion of linoleic acid to arachidonic acid — a pro-inflammatory compound that promotes LDL oxidation. Oxidised LDL is far more dangerous than unoxidised LDL because it's more readily taken up by arterial walls.

Additionally, sesame oil is rich in phytosterols — plant compounds that compete with cholesterol for absorption in the gut. Higher phytosterol intake is consistently associated with lower LDL cholesterol.

Cold Pressed Rice Bran Oil and Cholesterol

Rice bran oil contains oryzanol — a compound unique to rice bran that has been shown in multiple clinical trials to reduce total cholesterol and LDL while raising HDL.

A meta-analysis published in the European Journal of Clinical Nutrition (2015) analysed 11 randomised controlled trials and found that rice bran oil consumption was associated with:

  • 7.1% reduction in total cholesterol
  • 10.2% reduction in LDL
  • 4.3% increase in HDL

The oryzanol content is preserved only in cold pressed rice bran oil. Refined rice bran oil loses most of its oryzanol during the deodorisation process.

What to Avoid

Refined sunflower oil: Very high omega-6 content (120:1 omega-6 to omega-3). While it does lower LDL, it also lowers HDL and promotes inflammation. The net effect on cardiovascular risk is neutral to negative.

Refined palm oil: High in palmitic acid, which raises LDL. Also contains significant trans fats from the refining process.

Vanaspati: Partially hydrogenated fat with high trans fat content. Raises LDL and lowers HDL simultaneously. Avoid completely.

Refined soybean oil: The refining process destroys the omega-3 content, leaving a pro-inflammatory oil despite its theoretical omega-3 content.

Practical Recommendations

  1. Switch your primary cooking oil to cold pressed mustard oil. The omega-3 content and MUFA profile are the most evidence-backed combination for LDL reduction and HDL improvement.

  2. Add cold pressed sesame oil as a finishing oil. A teaspoon drizzled over dal or rice adds sesamin and phytosterols without adding significant calories.

  3. Use cold pressed rice bran oil for deep frying. Its high smoke point and oryzanol content make it the best choice for high-heat applications.

  4. Eliminate trans fats completely. Check labels for "partially hydrogenated" and avoid vanaspati entirely.

  5. Don't expect oil alone to fix high cholesterol. Oil quality is one variable. Total dietary pattern, exercise, weight management, and (where necessary) medication all play important roles.

  6. Recheck your lipid panel after 3 months. If you make the switch to cold pressed oils and maintain it consistently, you should see measurable improvements in your next blood test.
