Starter: Sesame-Crusted Paneer Tikka

Ingredients (serves 2):

  • 250g paneer, cut into 2-inch cubes
  • 3 tbsp cold pressed sesame oil
  • 2 tbsp thick yoghurt
  • 1 tsp ginger-garlic paste
  • 1 tsp red chilli powder
  • ½ tsp garam masala
  • ½ tsp cumin powder
  • Salt to taste
  • 3 tbsp white sesame seeds (for coating)
  • Lemon wedges and mint chutney to serve

Method:

  1. Mix sesame oil, yoghurt, ginger-garlic paste, and all spices into a marinade.
  2. Coat paneer cubes thoroughly. Marinate for at least 1 hour (overnight is better).
  3. Roll marinated paneer in sesame seeds to coat all sides.
  4. Cook in a preheated oven at 220°C for 12–15 minutes, turning once, until golden. Or cook on a hot tawa with a drizzle of sesame oil.
  5. Serve immediately with lemon wedges and mint chutney.

Main: Mustard-Marinated Chicken with Roasted Vegetables

Ingredients (serves 2):

For the chicken:

  • 4 chicken thighs (bone-in, skin-on for best flavour)
  • 3 tbsp cold pressed mustard oil
  • 2 tbsp whole grain mustard
  • 1 tbsp honey
  • 4 garlic cloves, minced
  • 1 tsp thyme (or ajwain as a substitute)
  • Salt and black pepper

For the roasted vegetables:

  • 2 medium potatoes, cubed
  • 1 red bell pepper, chunked
  • 1 zucchini, sliced
  • 1 red onion, quartered
  • 2 tbsp cold pressed mustard oil
  • Salt, pepper, and mixed herbs

Method:

  1. Mix mustard oil, whole grain mustard, honey, garlic, thyme, salt, and pepper. Coat chicken thighs thoroughly. Marinate for at least 2 hours.
  2. Preheat oven to 200°C.
  3. Toss vegetables with mustard oil, salt, pepper, and herbs. Spread on a baking tray.
  4. Place marinated chicken on top of the vegetables.
  5. Roast for 35–40 minutes until chicken skin is golden and juices run clear.
  6. Rest for 5 minutes before serving.

Plating: Arrange vegetables on the plate first. Place chicken on top. Drizzle any pan juices over everything.


Side: Sesame Noodles with Vegetables

A cold sesame noodle dish that works as a side or a light main. The cold pressed sesame oil dressing is the entire point of this dish.

Ingredients (serves 2):

  • 200g noodles (any type — rice noodles work beautifully)
  • 3 tbsp cold pressed sesame oil
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp honey
  • 1 tsp ginger, grated
  • 1 garlic clove, minced
  • 1 tsp chilli oil or red chilli flakes
  • 1 cucumber, julienned
  • 2 spring onions, sliced
  • 1 tbsp toasted sesame seeds
  • Fresh coriander

Method:

  1. Cook noodles according to package instructions. Rinse under cold water. Drain well.
  2. Whisk together sesame oil, soy sauce, rice vinegar, honey, ginger, garlic, and chilli.
  3. Toss noodles with the dressing.
  4. Add cucumber and spring onions. Mix gently.
  5. Garnish with toasted sesame seeds and coriander.
  6. Serve at room temperature or slightly chilled.

Note: This dish can be made 2–3 hours ahead and refrigerated. The flavours deepen as it sits.


Dessert: Til Halwa (Sesame Halwa)

A simple, deeply satisfying dessert that takes 20 minutes and uses cold pressed sesame oil for a subtle nutty richness.

Ingredients (serves 2):

  • 1 cup white sesame seeds
  • ¼ cup jaggery (or sugar)
  • 2 tbsp cold pressed sesame oil
  • ¼ tsp cardamom powder
  • Pinch of saffron (optional — dissolve in 1 tbsp warm milk)
  • Chopped pistachios for garnish

Method:

  1. Dry roast sesame seeds until golden. Cool completely.
  2. Grind to a coarse powder in a mixer.
  3. Heat sesame oil in a pan on low heat. Add the ground sesame. Stir continuously for 3–4 minutes until fragrant.
  4. Add jaggery and cardamom. Mix well — the jaggery will melt and bind the mixture.
  5. Add saffron milk if using. Mix until combined.
  6. Press into a greased plate or mould. Garnish with pistachios.
  7. Cool for 15 minutes before cutting.

Serve: Warm, with a small scoop of vanilla ice cream if desired.


Setting the Scene

The food is the main event, but a few details make the evening:

  • Lighting: Candles or warm-toned lights. Overhead fluorescent lighting is the enemy of romance.
  • Music: Prepare a playlist in advance. Silence is awkward; the wrong music is worse.
  • Timing: Start cooking 90 minutes before you want to eat. The starter can be prepared ahead; the main goes in the oven 45 minutes before dinner.
  • Presentation: Use your best plates. Wipe the rims before serving. A sprig of coriander or a lemon wedge makes any dish look more intentional.
