Is cold pressed mustard oil better than refined mustard oil? Yes — cold pressed (kachi ghani) mustard oil is significantly better on every nutritional and culinary dimension. It retains full omega-3 fatty acids (ALA), vitamin E, and the natural pungency compounds (allyl isothiocyanate) that give mustard oil its health benefits and flavour. Refined mustard oil loses up to 80% of its omega-3 content, most of its vitamin E, and all of its natural pungency during high-heat extraction and refining. The only advantage of refined is a lower price and a higher smoke point.
What is the difference between kachi ghani and refined mustard oil? Kachi ghani mustard oil is extracted by slow mechanical pressing at below 45°C with no chemical solvents — the oil is chemically identical to what is inside the mustard seed. Refined mustard oil is extracted using hexane solvent at 160–200°C, then bleached and deodorised, producing a pale, odourless oil that has lost most of its nutritional value. Kachi ghani is deep amber with a strong pungent smell; refined is pale yellow with little to no smell.
Does cold pressed mustard oil have a lower smoke point than refined? Yes — cold pressed mustard oil has a smoke point of approximately 160°C versus around 240°C for refined. However, most Indian cooking — tadka, sautéing, shallow frying — does not exceed 180°C, so cold pressed is perfectly suitable. The higher smoke point of refined oil is a result of removing all the volatile compounds and antioxidants through refining, not an inherent advantage.
Is refined mustard oil safe to cook with? Refined mustard oil is FSSAI approved and safe for cooking. The main concerns are nutritional: the refining process destroys most of the omega-3 fatty acids, vitamin E, and beneficial pungency compounds. There is also the question of hexane residues — trace amounts of this petroleum-derived solvent can remain in refined oils after processing. Cold pressed oil uses no solvents.
How much more does cold pressed mustard oil cost than refined? Cold pressed mustard oil costs approximately ₹220–₹260 per litre versus ₹120–₹160 for refined — a difference of ₹80–₹100 per litre. For a household using 1–2 litres per month, that is ₹80–₹200 per month extra for significantly better nutrition, authentic flavour, and zero chemical solvents.
