Golden Turmeric Dum Aloo Recipe — Baby Potatoes in Cashew-Saffron Gravy

Dum Aloo is a celebration of the humble potato — transformed by the dum technique (slow-cooking in a sealed vessel) into something extraordinary. Golden-crusted baby potatoes simmered in a velvety, mildly sweet gravy of cashews, turmeric, and aromatic spices, finished with saffron milk and kasuri methi.

The golden colour comes from Dune Aura Stone Ground Turmeric Powder — stone-ground from whole dried turmeric roots to preserve the curcumin and volatile oils that give turmeric its vivid colour and characteristic earthy warmth.

Ingredients

  • 15 baby potatoes, boiled and peeled
  • 10 cashews, soaked in warm water for 20 minutes and blended to a smooth paste
  • ½ cup full-fat curd (yoghurt)
  • 2 tsp Dune Aura Garam Masala
  • 1.5 tsp Dune Aura Turmeric Powder (divided)
  • 1 tsp kasuri methi (dried fenugreek leaves), crushed
  • 2 tbsp Dune Aura Cold Press Mustard Oil
  • Salt to taste

For the saffron finish:

  • A generous pinch of saffron strands
  • 3 tbsp warm milk

Method

Step 1 — Prepare the saffron milk

Soak saffron strands in warm milk for 15 minutes. The milk will turn a beautiful golden-orange colour. Set aside.

Step 2 — Fry the baby potatoes

Prick each boiled baby potato several times with a fork — this allows the oil and spices to penetrate during frying.

Heat mustard oil in a pan until it just smokes. Add a pinch of turmeric to the oil. Add the baby potatoes and fry on medium-high heat, turning regularly, for 6–8 minutes until golden-crusted all over. Remove and set aside.

The golden crust is not just visual — it creates a slightly crispy exterior that contrasts beautifully with the soft interior and the velvety gravy.

Step 3 — Prepare the gravy base

In a bowl, whisk together the curd, cashew paste, garam masala, remaining turmeric, and salt until completely smooth.

Step 4 — Cook the gravy

Heat 1 tbsp oil in a heavy-bottomed pot on low-medium heat. Add the curd-cashew mixture and cook, stirring continuously, for 4–5 minutes. Never add this mixture to a very hot pan — the curd will curdle. Stir continuously and keep the heat moderate.

The gravy will gradually thicken and turn a beautiful golden-yellow colour from the turmeric and saffron.

Add ½ cup water to adjust consistency. Stir in the saffron milk.

Step 5 — Dum cooking

Add the fried baby potatoes to the gravy. Stir gently to coat. Cover the pot tightly and cook on the lowest possible flame for 10–12 minutes. This is the dum stage — the steam circulates inside the sealed pot, infusing the potatoes with the gravy flavours.

Chef's Secret: Golden Garam Masala and turmeric pair beautifully with dairy or nut bases, yielding that majestic bright yellow glow. The cashew paste provides natural creaminess without the heaviness of cream, and the saffron adds a floral note that elevates this from a simple potato dish to something genuinely special.

Step 6 — Finish

Remove lid. Crush kasuri methi between your palms and sprinkle over the dum aloo. Stir gently. Taste and adjust salt.

Can I use regular potatoes instead of baby potatoes? Yes — cut into 1.5-inch cubes, boil until just tender, and proceed as above. Baby potatoes give a better presentation and texture.

How do I prevent the curd from curdling? Use full-fat curd at room temperature (not cold from the refrigerator), add it to a moderate-heat pan, and stir continuously. Never add cold curd to a very hot pan.

Can I make this without cashews? Yes — substitute with 2 tbsp of melon seed (magaz) paste or simply omit. The gravy will be thinner but still flavourful.

How do I get a deeper yellow colour? Use more turmeric (up to 2 tsp) and ensure the saffron is properly soaked. The colour deepens during the dum cooking stage.
