Amritsari Pindi Chole Recipe — Dark, Spicy Chickpeas with Authentic Chana Masala

Amritsari Pindi Chole Recipe — Dark, Spicy Chickpeas with Authentic Chana Masala — Dune Aura, cold press mustard oil & masalas, Gurgaon

Dark, spicy, and intensely flavourful — Pindi Chole is the version of chole that serious cooks make when they want to impress. Named after Rawalpindi (now in Pakistan), this style of chole is characterised by its deep brown-black colour, robust spicing, and thick, almost dry gravy that clings to every chickpea.

The colour comes from an unexpected ingredient: tea bags. The spice depth comes from Dune Aura Stone Ground Chana Masala — a blend of amchur, anardana, roasted cumin, coriander, black cardamom, and dried ginger that delivers the characteristic tangy-spicy punch of authentic Punjabi chole.

Ingredients

  • 2 cups dried chickpeas (kabuli chana), soaked overnight
  • 2 tea bags (regular black tea — for colour)
  • 3 tbsp Dune Aura Chana Masala
  • 1 tsp amchur (dry mango powder)
  • 2 tomatoes, finely chopped
  • 1 green chilli, slit
  • 2 tbsp Dune Aura Cold Press Mustard Oil — the traditional fat for Punjabi chole; its pungency builds the characteristic dhaba-style depth (ghee can be used for a richer finish)
  • A pinch of baking soda
  • Salt to taste
  • Fresh ginger juliennes and coriander for garnish

Method

Step 1 — Pressure cook with tea bags

Drain soaked chickpeas. Place in a pressure cooker with 1 litre fresh water, the 2 tea bags, salt, and a pinch of baking soda. Pressure cook for 5–6 whistles until completely soft — the chickpeas should crush easily between your fingers.

Discard the tea bags. The chickpeas will have taken on a deep brown colour from the tannins in the tea. This is the authentic Pindi Chole technique — no artificial colour, just tea.

Step 2 — Build the masala

Heat Dune Aura Cold Press Mustard Oil in a heavy kadai until it shimmers. Add chopped tomatoes and cook on medium-high heat for 8–10 minutes, stirring frequently, until completely broken down and the oil separates.

Why Cold Press Mustard Oil for Pindi Chole? The best chole bhature stalls in Amritsar and Chandigarh have always used mustard oil — not ghee, not refined oil. The natural pungency of kachi ghani sarson ka tel creates a sharp, earthy base that is the hallmark of authentic Punjabi chole. When the oil separates from the masala (the "tel chhadna" stage), cold press mustard oil creates a more intensely flavoured separation than any other fat. Step 3 — Add the masala

Add Dune Aura Chana Masala, amchur powder, and slit green chilli. Cook for 2 minutes, stirring constantly. The masala should be fragrant and the ghee should pool at the edges.

Step 4 — Combine

Add the boiled chickpeas along with about 1 cup of the cooking liquid. Stir well to combine.

Chef's Secret: Mash a handful of chickpeas against the side of the pot with the back of a ladle. This releases starch into the gravy, giving Pindi Chole its signature thick, restaurant-style body without any thickening agents.

Step 5 — Slow simmer

Simmer on low heat for 15 minutes, stirring occasionally, until the gravy is dark, thick, and luscious. The final consistency should be much thicker than regular chole — almost a coating gravy rather than a flowing one.

Step 6 — Garnish and serve

Top with fresh ginger juliennes, chopped coriander, and a squeeze of lemon. Serve with bhature, puri, or kulcha.

The Amritsari Difference

Regular chole is red-orange and moderately spiced. Pindi Chole is dark brown-black, intensely spiced, and has a thick, almost dry gravy. The differences come from three things:

  1. Tea bags during boiling — adds colour and a subtle tannin depth
  2. Amchur + anardana — the souring agents in Dune Aura Chana Masala give the characteristic tangy brightness
  3. Thick reduction — the gravy is cooked down much further than regular chole

The stone-ground chana masala is critical here — the volatile acids in the amchur and anardana that give this dish its signature brightness are preserved by low-heat grinding. Industrial masala has largely lost these compounds by the time it reaches your kitchen.

FAQ

Can I use canned chickpeas? Yes — skip the pressure cooking step. Add canned chickpeas (drained and rinsed) directly in Step 4. You will miss the colour from the tea bags, so add ½ tsp of strong brewed tea to the gravy for colour.

How dark should the final colour be? Authentic Pindi Chole is deep brown — almost the colour of dark chocolate. If your chole is orange-red, it is not Pindi style.

Can I make this without ghee? This recipe already uses Dune Aura Cold Press Mustard Oil as the primary fat — which is actually the more authentic Amritsari choice. If you want to add ghee, drizzle 1 tsp over the finished chole just before serving for a rich, aromatic finish. The combination of mustard oil for cooking and a ghee finish is the classic dhaba technique.

How spicy is this? Moderately spicy. The chana masala provides heat through the dried chillies, balanced by the sourness of amchur and anardana. Add an extra green chilli if you want more heat.
